Spicy Okra Fry
An okra dish that's equally at home in Kerala or in New Orleans.
Ingredients
1. 2 cups chopped okra
2. 3 tbsp besan flour (chickpea)
3. 1/2 tsp chilli rub
4. olive oil
5. salt to taste
Directions
1. chop the okra into one inch cuts
2. dry the okra with a paper towel
(for best results, dry thoroughly)
3. mix besan flour, salt, and okra in a bowl
4. heat oil in a pan
5. once oil is hot, toss in the okra
(some besan should have stuck to the okra)
6. when okra is about 80% done sprinkle in the chilli rub and finish sauteeing
