Spiced Moong Bean Salad Spiced Moong Bean Salad
A quick protien rich salad that can be a quick snack or an addition to any meal.

Ingredients
1. 1 cup moong beans
2. 1/2 lime (or lemon)
3. 1/2 cup cilantro
4. pinch of rock salt
5. 1 tsp Chilli Rub

Directions
1. place 1 cup of sprouted moong beans in a bowl

2. squeeze lime juice in a cup, add a pinch of rock salt

3. mix the lime juice with the sprouted moong beans

4. sprinkle 1 teaspoon Chilli Rub (or more to taste) and toss in the bowl

5. garnish with chopped cilantro and a lime wedge

This is another very healthy and quick dish (although you have to sprout the beans the night before). Once the beans are sprouted, you literally have five minutes of work. You can eat is as is, part of a salad (as a garnish), and also include this in a tortilla with some yogurt and cut vegetables, to make a delightful and healthy wrap.
