Curried Mango Tofu Curried Mango Tofu
A healthy vegetarian dish that takes 10 minutes.

Ingredients
1. 1 packet extra firm tofu
2. 1/2 teaspoon Sambar Powder
3. 1 mango
4. 1 teaspoon olive oil

Directions
1. drain tofu and slice the tofu into 1 inch cubes
2. peel and slice mango in thin 1/4 inch strips (keep tofu and mango separate for now)
3. sprinkle Sambar Powder on tofu and mango
4. heat oil in a sauce pan
5. once oil is hot add tofu
6. once tofu is 80% cooked add the mango
7. (you can saute the mango and tofu separately as well)
8. (you can serve with 1 cup rice, mix the rice with the mango and tofu in a bowl or eat in separate dishes)
